South of the Border Mahi Mahi

A fisherman friend of mine just brought me some fresh Mahi Mahi that he caught.  I always take advantage of any opportunity to get fresh caught fish. Freshness makes all of the difference in the flavor and texture of the fish.  He had already removed the head, tail, and fins but left the skin on.  When cooking fish, I often like to make a quick marinade to infuse the fish with flavor.  Today, I decided to go with a south of the border flavor using fresh lemon or lime juice, cilantro, and chopped jalapeno.  The citrus brightens the fish, cilantro brings out southern flavor, and the jalapeno adds just a bit of heat. I also add a bit of crushed garlic, season with salt and pepper, and drizzle with olive oil.   For oven cooking, heat the oven to 400 degrees and cook for about 15-20 minutes, depending on the size of your fish.  I cooked the fish with the skin on.  Once the fish is done, the skin can easily be peeled back with a knife or fork.  The fish is so fresh, and with the flavor of the cilantro, citrus, and jalapeno, you would think you are on the beach in Mexico.  Here I served with some oven roasted potatoes. An ice cold Corona, would also go nicely. Salud!
