Have you ever heard the song from the group Presidents of the United States of America? “Moving to the country, going to eat a lot of peaches!” I always think of that song when I am out in the Texas Hill Country, as there are tons of peaches being sold on the sides of the road. The hill country is not the only place in Texas though that has peaches. If you ever drive from Houston to Dallas you go through the little town of Fairfield. Fairfield is the home of Cooper Farms Peaches. Cooper Farms is a family run farm whose main crop is peaches; however they do also offer figs, tomatoes, cucumbers, blackberries and plums. I have bought peaches from them many times from their roadside stand, but now they have a full store right off of Interstate 45 in Fairfield. I stopped by for a visit and they serve a fantastic peach ice cream. They drizzle a little bit of peach cobbler over the peach ice cream which adds richness and makes you feel at home. It is definitely worth a stop for the ice cream alone. Along with the fresh peaches and produce they are also selling peach cobbler and pies. I took one of their peach cobblers home and put it in the oven. It was one of the best I have had in a long time. The crust always makes or breaks the cobbler, and they really got it right. It was firm and flaky and did not get soggy from the peaches. Combine it with ice cream, and you will want to move to the country to get more of the stuff. Whenever you get a chance support your local growers and farmers markets. You will ensure that you get the freshest ingredients and support your local economy as well. Sounds peachy doesn’t it?
